Boozy Baking: Chocolate Guinness Cupcakes with Baileys Cream Cheese Frosting

Did you know Guinness has fewer calories than most beers? FACT: it only has 15 more calories than a Bud Light. So that totally gives us justification to make chocolate cupcakes from it, right?

Did you start daydreaming somewhere around Guinness and we lost you somewhere around calories? Let me reel you back in. We made Guinness Chocolate Cupcakes with Baileys Cream Cheese Frosting and MY GOODNESS, MY GUINNESS they were good.

If you are planning a St. Patrick’s Day party, these subtly themed deserts will have your guests dancing a jig. Set up video cameras because, we promise, it will happen.

Ingredients for Cupcakes:

  • 2 cups of flour

  • 2 cups of sugar

  • ¾ cup of cocoa

  • 1 teaspoon salt

  • ½ teaspoon baking powder

  • 1 ½ teaspoons baking soda

  • 2 large eggs

  • 1 cup vegetable oil

  • 1 cup Guinness

  • 1 ½ teaspoons pure vanilla extract

  • 1 cup buttermilk

Directions for Cupcake:

  1. Preheat oven to 300 degrees.

  2. Line a cupcake pan with cupcake wrappers.

  3. Mix the flour, sugar, cocoa, salt, baking powder and baking soda together in a large bowl.

  4. In a separate bowl, beat eggs with an electric mixer until they are thicker and bright yellow. Add oil, Guinness and vanilla, then mix well.

  5. Alternate adding the dry ingredients and the buttermilk to the wet ingredients (start with the dry ingredients, then buttermilk, going back and forth).

  6. Pour the batter into the cupcake wrappers stopping about a ¼ inch from the top.

  7. Bake at 300 degrees for 30 minutes. Test with a toothpick and add time as needed.

Ingredients for Frosting:

  • 1 cup softened unsalted butter

  • 1 cup softened cream cheese

  • 1 teaspoon pure vanilla extract

  • 1/3 cup Baileys Irish Cream

  • 1 ½ - 2 cups powdered sugar (depending on sweetness desired- start at 1 ½ and add to taste)

Directions for Frosting:

  1. In a medium bowl, beat softened butter and cream cheese together.

  2. Slowly stir in vanilla and Bailey’s Irish Cream.

  3. Add ¼ cup of powdered sugar at a time and whip on high until frosting is the desired consistency and sweetness.
