For the plum puree: Add the plum quarters to a saucepan along with water. Cook for about 10 minutes on a medium heat until the plums have broken down to a thick puree and are soft and tender. Puree in a blender or with a stick blender until smooth.

For the cocktail: In a shaker with ice, add vodka, plum puree, lemon juice, simple syrup, apple juice and two thyme sprigs. Shake and strain into a glass. Garnish with a thyme sprig, apple wedge and plum wedge.
