In a shaker, muddle 6 blackberries and 6 mint leaves in ¼ ounce simple syrup. In a separate mixing glass, combine bourbon, lemon juice and remaining simple syrup. Add mixture to shaker with muddled blackberries and mint leaves. Add ice and shake well. Double strain into a glass over fresh ice. Top with sparkling wine and garnish with a skewer of remaining blackberry and mint leaf.
