A classic Mule includes a nice dose of fresh citrus. In this version, you'll use lime, and pair it with the citrusy bergamot flavor of Earl Grey tea (bergamot is a type of orange) for a sophisticated twist.
Remember to shake the cocktail before you add the ginger beer, unless you like to live dangerously.
Fill the glass with hot water to heat it up.
To make the tea simple syrup, brew 4 bags of Earl Grey tea in a cup of hot water. Add 1 cup of sugar. Mix until clear and then let cool.
Measure and pour ¾ oz of the simple syrup into your mixing glass. Squeeze ¾ oz fresh lime juice and add it. Fill the glass with ice. Pop on the Boston shaker and shake well. Fill the mug with ice and strain the mix over it using a Hawthorne strainer. Pour about 3 oz of ginger beer on top. Mix with the bar spoon, in a circular, up-and-down motion, like a carousel horse.
Slice a wedge of lime to garnish.
