Cocktail:

 

*Orange-Chamomile Simple Syrup:

  • 16 ounces water
  • 1 orange, peeled
  • 2 tablespoons dried chamomile flowers or teabags
  • 2 cups sugar

Directions

For the orange-chamomile simple syrup: In a small saucepan, add water, orange peel and chamomile. Bring to a boil over high heat and then remove from heat and let stand for 10 minutes. Fine strain the syrup into a bowl, discard the solids and add sugar. Stir until sugar is dissolved. Transfer to a container and store in the refrigerator.

For the cocktail: In a mixing glass, add tequila, syrup, lemon juice, spiced rum and bitters. Stir to combine and strain into a glass over ice. Squeeze orange zest over cocktail and rub around the rim before adding to glass. Garnish with a tarragon sprig.
