The Drouhin family have been making Calvados in Normandy for generations. Their orchards are in the Pays dAuge, the heart of Calvados country. The Drouhins use as many as 15 apple varieties to get the complexity in their Calvados. The apples are pressed once and the fermented juice rests in barrels for a few months before distillation.
