Higher proof, higher responsibility: Proof, as you doubtless know, is double the percentage of alcohol in a given liquor—a 140 proof bottle is 70 percent alcohol—and high proof is generally considered to begin at about 50 percent, or 100 proof. High-alcohol spirits are best used in big batch cocktails, where the alcohol is diluted by flavorful juices, sodas, fresh fruits and syrups.
